Abstract
⺠A new potato carboxypeptidase inhibitor was isolated using proteomics techniques. ⺠Intensity fading is interactomic technique useful to the detection of inhibitors. ⺠The PCI was characterised by electrophoretic and proteomics techniques. ⺠Protease inhibitors could have anticarcinogenic and positive dietary effects.
