Abstract
⺠Twenty selected potato clones, including pigmented ones were analysed and compared. ⺠Pigmented potatoes contain more phenolics and these components were retained in granules. ⺠Pigmented potatoes have close to one half of the antioxidant activity of berries. ⺠Granulation process significantly reduced glycoalkaloids level. ⺠Extracts from selected potato granules showed potent neuroprotective activity.
