Abstract
► We applied heat-moisture treatment (HMT) to waxy potato starch. ► Optimal conditions for HMT were established using response surface methodology. ► After HMT, starches with high SDS content were produced. ► HMT waxy potato starch was evaluated for its glucose response in mice.
