Abstract
⺠We applied heat-moisture treatment (HMT) to waxy potato starch. ⺠Optimal conditions for HMT were established using response surface methodology. ⺠After HMT, starches with high SDS content were produced. ⺠HMT waxy potato starch was evaluated for its glucose response in mice.
