Abstract
⺠A biocatalyst with immobilized yeast cells on corn grains was prepared. ⺠It was used for ambient and low temperature wine making. ⺠Immobilized cells produced wines with improved flavour compared to free cell systems. ⺠A model for the fermentation of immobilized cells was proposed.
