Abstract
⺠We identified the immune-regulating function of wheat starch. ⺠The immune-regulating function strongly depended on the molecular weight. ⺠We established the processing method to provide the activity to wheat starch. ⺠Starch enhanced or inhibited the immunity depending on the surrounding circumstances.
