Abstract
⺠We analyse parameters in a set of aged samples of vintages from 1999 back to 1935. ⺠The analysed samples from very rare and very old wine are extremely valuable. ⺠We study the evolution of analytical parameters during ageing. ⺠A statistical model has been successfully obtained. ⺠PCA confirmed that most of the studied variables are strictly linked to ageing.
