Abstract
► We analyse parameters in a set of aged samples of vintages from 1999 back to 1935. ► The analysed samples from very rare and very old wine are extremely valuable. ► We study the evolution of analytical parameters during ageing. ► A statistical model has been successfully obtained. ► PCA confirmed that most of the studied variables are strictly linked to ageing.
