Abstract
⺠Monoethyl carbonate is formed in aqueous medium containing ethanol and bicarbonate. ⺠Monoethyl carbonate was detected in samples of beer and sparkling wine. ⺠It is also formed in drinks prepared by mixing a spirit and a soda. ⺠Despite the loss of CO2, monoethyl carbonate is formed at low pH. ⺠Interconversion of bicarbonate and monoethyl carbonate is faster at low pH.
