Abstract
► Virgin olive oil (VOO) has antioxidants beneficial to health. ► An electrophoretic method was optimised and validated. ► We enrich VOO with antioxidants phenolic acids from natural herbs. ► The natural herbs studied were thyme, oregano and rosemary. ► Stirring with and without temperature were the enrichment methods used.
