Abstract
⺠Virgin olive oil (VOO) has antioxidants beneficial to health. ⺠An electrophoretic method was optimised and validated. ⺠We enrich VOO with antioxidants phenolic acids from natural herbs. ⺠The natural herbs studied were thyme, oregano and rosemary. ⺠Stirring with and without temperature were the enrichment methods used.
