Abstract
⺠Metal ions (Cu2+, Fe2+ and Fe3+) seriously affected HPLC analysis of catechins. ⺠Metal ions bind to catechins and oxidize them or catalyze their oxidation by oxygen. ⺠An optimum condition using EDTA was proposed for HPLC analysis.
