Abstract
⺠Mung bean seeds grown in Thailand contained high trypsin inhibitory activity. ⺠A 14 kDa trypsin inhibitor from mung bean seeds was purified and characterized. ⺠The inhibitor was heat stable and high activity was retained over a wide pH range. ⺠It was also stable at high salt concentration up to 3%.
