Abstract
► Carbohydrates and pollen were analysed in 109 Spanish honeys. ► Two monosaccharides, 14 disaccharides, and 11 trisaccharides were positively identified. ► A robust quantitation procedure was applied, allowing to detect unidentified coeluting compounds. ► Multivariate analysis was carried out in order to find characteristic components of honey types.
