Abstract

âº Himanthalia elongata-enriched restructured pork (HEP) is a potential functional meat. âº The effects of diets containing HEP on cholesterolemia and liver antioxidant biomarkers were tested in growing rats. âº In non-added cholesterol diets, HEP reduced liver oxidation mechanisms. âº In added cholesterol diets, HEP acted as hypocholesterolaemic and induced a new antioxidant enzyme expression balance.
