Abstract
⺠Sodium bicarbonate was able to induce the dissociation of actomyosin from Pacific white shrimp. ⺠The dissociation and conformation changes of actomyosin were effectively enhanced with the aid of NaCl. ⺠Excessive concentration of sodium bicarbonate more likely caused the disruption of muscle filaments.
