Abstract
► We studied the impact of dietary kiwifruit on the digestion of food proteins. ► Green kiwifruit increased the gastric digestion of muscle, gelatin, SPI and gluten. ► Kiwifruit had little effect on the gastric degradability of zein and WPI. ► Proteins were extensively digested in the ileum regardless of kiwifruit consumption.
