Abstract
⺠We studied cactus berry fruit at different maturity stages and after storage. ⺠We assessed antioxidant activities of cactus berry phenols and vitamin C. ⺠Maturity and storage reduce phenolics, vitamin C and antioxidant activities. ⺠Beta cyanins increase as fruit matures and after storage. ⺠Due to the antioxidant properties cactus berries could contribute to health.
