Abstract
⺠Electrical discharges are applied on grape pomace for antioxidants polyphenols extraction. ⺠The effects of various electrical and diffusion operating parameters are studied. ⺠Electrical discharges increase polyphenols extraction up to a critical energy input. ⺠The combination of ethanol and temperature also improves the extraction yields.
