Abstract
⺠Ten types of biogenic amines were found in Rihaakuru. ⺠High levels of histamine (>50 ppm) were detected from 50% of the product. ⺠Weak histamine-formers were detected from bacterial isolates. ⺠Histamine content probably originated during early processing.
