Abstract
⺠Conjugated form of deoxynivalenol, DON-3-Glucoside (DON-3-Glc) is ubiquitous contaminant of beer. ⺠DONPREP immunoaffinity columns are cross-reacting to DON-3-Glc. ⺠Levels of DON and DON-3-Glc can increase significantly within the brewing process. ⺠There is no correlation between levels of mycotoxins in malt and final beer.
