Abstract
⺠Steam explosion broke sumac fruit cells. ⺠Steam explosion caused little change in total flavonoid content. ⺠A kinetic study showed that steam explosion enhanced the flavonoid extraction. ⺠Quercetin-3-O-rhamnoside was deglycosylated to quercetin by steam explosion.
