Abstract
⺠Introduce of the unsaponifiable matter (USM) of bene (a species of pistachio growing wild in Iran) hull oil (BHO) and their fractions separated as new sources of natural compounds with high antioxidant activity for food systems. ⺠Separation of the USM of BHO to different contributions of antioxidative fractions (seven fractions) which were able to inhibit lipid oxidation effectively by different mechanisms of action. ⺠Identification of some terpenoid fractions, particularly 4,4â²-dimethyl sterols and triterpenic dialcohols, with high antioxidant activities.
