Abstract
⺠A method for quantifying guaiacol glycoconjugates has been developed and validated. ⺠Glycoconjugates accumulated in grape berries following grapevine exposure to smoke. ⺠Higher concentrations of glycoconjugates were present in grape skins compared with pulp.
