Abstract
⺠High sodium intake requires accurate and fast analysis of sodium chloride in bread. ⺠Reference methods and a newly developed ISE were evaluated. ⺠Significant differences were found between chloride-based and sodium-based methods. ⺠Authorities should indicate the analytical procedure for compliance monitoring.
