Abstract
⺠Aflatoxin (AF) was analysed with HPLC-FD after post-column derivatisation. ⺠In vitro digestion model was used to evaluate the bioaccessibity of AFs. ⺠AFs were highly bioaccessible in various food matrices. ⺠Probiotic bacteria reduced the bioaccessibility of AFs. ⺠Binding was reversible.
