Abstract
► Aflatoxin (AF) was analysed with HPLC-FD after post-column derivatisation. ► In vitro digestion model was used to evaluate the bioaccessibity of AFs. ► AFs were highly bioaccessible in various food matrices. ► Probiotic bacteria reduced the bioaccessibility of AFs. ► Binding was reversible.
