Abstract
												⺠Nutrient retition was studied in Ipomoea batatas cultivars. ⺠The use of FMI index in cooking processes on six phenols in eight potato cultivars. ⺠The index allows the evaluation of nutritional, safety, and processing aspects. ⺠The results suggest us that the FMI is able to predict the processing effects.
