Abstract
► Glycosidase (EC 3.2.2.) activity is applied to characterize and identify vegetables. ► Seven kinds of glycosidase in each vegetable are assayed and its glycosidase-activity profile is made. ► Each profile is compared by means of chemometric analyses. ► Thirty heads of cabbage (B. oleracea L. var. capitata), itemized into 6 different cultivars are simultaneously and correctly discriminated into 6 different cultivars by the present method.
