Abstract
► Longissimus lumborum muscle quality has been tested in Casertana and Large White pigs. ► Quality parameters were related to differential proteomic and targeted metabolomic analyses. ► Glycolytic enzymes and lactate accumulation were related to slow pH drop in Casertana pigs. ► They were related to rapid pH lowering in LW counterparts. ► Post mortem performances were influenced by differential proteomic and metabolomic profiles.
