Abstract
⺠Durian seed gums showed the pseudoplastic (shear-thinning) flow behaviour. ⺠The purification using isopropanol and ethanol led to induce the highest viscosity. ⺠Durian seed gums exhibited more elastic behaviour than the viscous behaviour (Gâ²Â > Gâ³). ⺠The freeze-dried gum provided the highest and lowest viscous modulus (Gâ³). ⺠Purification using saturated barium hydroxide could provide the most desirable rheological properties.
