Abstract
⺠Inulinase production by newly isolated fungal strain under SSF. ⺠Maximum inulinase yield (257 ± 11.4 U/g) was achieved using wheat bran and CSL. ⺠The enzyme is highly thermostable and active at low pH. ⺠The crude inulinase hydrolyzed fructose polymer in an exo acting manner. ⺠Fructose was released as an end product.
