Abstract
⺠A nanocomplex between chondroitin sulfate and anthocyanin was investigated. ⺠The nanocomplex was induced by intermolecular stacking interaction. ⺠The process does not need any inputting high energy or an organic solvent. ⺠The structural stability of the anthocyanin was maintained for 2 days at 37 °C. ⺠The system has a potential as a carrier for antioxidants or water-soluble drugs.
