Abstract
⺠Maize and teff starch biphasic pasting occurs in the presence of added stearic acid. ⺠First biphasic peak viscosity pastes give non-distinct V-amylose XRD patterns. ⺠The second biphasic peak viscosity paste shows distinct XRD V-amylose patterns. ⺠Pasting without added stearic acid gives amorphous to A + V type crystallinity. ⺠First and second pastes have Type I and Type II V-amylose, respectively.
