Abstract
► Maize and teff starch biphasic pasting occurs in the presence of added stearic acid. ► First biphasic peak viscosity pastes give non-distinct V-amylose XRD patterns. ► The second biphasic peak viscosity paste shows distinct XRD V-amylose patterns. ► Pasting without added stearic acid gives amorphous to A + V type crystallinity. ► First and second pastes have Type I and Type II V-amylose, respectively.
