Abstract
⺠Agars from Gracilaria vermiculophylla were extracted under different MAE conditions. ⺠Different MAE conditions result in polyelectrolytes with distinct properties. ⺠The formation of coacervates between MAE agars and WPI was followed by O.D. and ITC. ⺠WPI/agar interactions were monitored as a function of agar, pH and ionic strength. ⺠The binding of WPI to MAE agars samples has been shown different contributions.
