Abstract

âº We extracted and modified pinhÃ£o starch by acid hydrolysis. âº The microcapsules were stored under different conditions. âº The different parameters were fitted using first-order kinetic and Weibull model. âº The microcapsules were more sensitive to ultraviolet light. âº The hydrolyzed starch promoted greater Î²-carotene stability.
