Abstract
⺠When xanthan and locust bean gum are mixed together the smooth unsubstituted regions of the locust bean gum molecules associate with the helical xanthan structures. ⺠Produces matrix that is both stronger than high viscosity xanthan and less rubbery than cross-linked locust bean gum. ⺠Process is stimulated by the presence of cations (o).
