Abstract
⺠Characteristics of Cynanchum auriculatum Royle ex Wight starches were assessed. ⺠Physicochemical properties and nutritional fractions varied from different cultivars. ⺠Structural variations among starches influenced their properties. ⺠Digestibility were dependent on crystal structure and long-chain amylopectin.
