Abstract
⺠Effect of guar gum on dielectric and pore size distribution of collagen composites. ⺠Guar gum does not bring any change in the conformation of collagen. ⺠Pore size distribution can be controlled by varying the concentration of guar gum. ⺠Thermal stability of biocomposite system increases with concentration of guar gum. ⺠Ionic charge drift on the protein-additive interfaces affects hydration of protein.
