Abstract
⺠Composition and viscosity of chitosan film forming solutions influenced drying process. ⺠Aroma loss during drying was water content dependant. ⺠Exponential relationship between the retention during dying and the film partition coefficient was observed. ⺠Aroma retention increased with the addition of nanoclays, glycerol and arabic gum, respectively.
