Abstract
⺠Gelation in lambda-carrageenan is induced by iron (III) ions. ⺠The iron-lambda-carrageenan gels are thermally stable. ⺠Fiber diffraction patterns are composed of well resolved Bragg reflections suggesting a highly ordered hydrocolloid network.
