Abstract
⺠We studied the hygroscopy of gums at different temperatures with industrial use. ⺠Hygroscopic characteristics were related to chemical structure of polymers. ⺠Water adsorption isotherms were modelled using GAB model. ⺠Sorption heats were estimated by thermodynamic analysis. ⺠The most adequate atmosphere conditions to minimize spoilage reactions were found.
