Abstract
► We studied the hygroscopy of gums at different temperatures with industrial use. ► Hygroscopic characteristics were related to chemical structure of polymers. ► Water adsorption isotherms were modelled using GAB model. ► Sorption heats were estimated by thermodynamic analysis. ► The most adequate atmosphere conditions to minimize spoilage reactions were found.
