Abstract
► Effects of nitrogen application (NA) on different properties of rice were studied. ► NA increased a*- and b*-values, protein content and starch gelatinization temperature. ► NA decreased the L*-value, gruel solids and starch amylose content. ► NA increased the hardness and chewiness of cooked rice.
