Abstract
► Microscopy techniques were useful to obtain microstructure information of edible films. ► Texture image analysis is an efficient tool to evaluate the microstructure of edible films. ► The fields of view used in light microscopy had an important influence on the textural features. ► Entropy and fractal dimension and entropy/fractal dimension ratio were successful to evaluate the complexity and roughness of edible films. ► Fractal dimension showed an adequate correlation with roughness parameters of atomic force microscope.
