Abstract
⺠Microscopy techniques were useful to obtain microstructure information of edible films. ⺠Texture image analysis is an efficient tool to evaluate the microstructure of edible films. ⺠The fields of view used in light microscopy had an important influence on the textural features. ⺠Entropy and fractal dimension and entropy/fractal dimension ratio were successful to evaluate the complexity and roughness of edible films. ⺠Fractal dimension showed an adequate correlation with roughness parameters of atomic force microscope.
