Abstract
⺠We characterize starches from white and yellow Tacca involucrata tubers. ⺠We examine the structural, physicochemical and rheological properties. ⺠White and yellow tacca exhibit C-type and A-type diffraction patterns, respectively. ⺠The starches possess potential for food application.
