Abstract
⺠Starch-based nanospheres were used as solid particulate emulsifier. ⺠A amphiphilic group was introduced into the backbone of starch by a simple esterified reaction. ⺠Amphiphilic starch-based nanospheres were fabricated by a nanoprecipitation procedure. ⺠Nanospheres adsorbed at the interface between oil and water phase. ⺠The catastrophic inversion and transitional inversion could be easily achieved.
