Abstract
⺠We measured granular characteristics of 10 non-waxy rice starches. ⺠The granular structure was related with thermogravimetric parameters. ⺠Increasing relative crystallinity would increase the activation energy. ⺠The relative crystallinity depended upon amylopectin chain length.
