Abstract
► We evaluated the type of interactions between κ-carrageenan and chitosan during the construction of a nanolayered coating. ► κ-Carrageenan/chitosan interaction is an exothermic process. ► Alternating deposition of κ-carrageenan/chitosan resulted in the formation of a stable multilayer structure mainly due to electrostatic interactions. ► The κ-carrageenan/chitosan nanolayers exhibit good gas barrier properties and offer great potential to be used to coat food systems.
