Abstract
⺠Process developed to isolate corn fiber gum preserving its functional components (protein, phenolic acids and lipids). ⺠Low alkali concentration and short incubation time preserves a maximum percent of protein and phenolic acids on corn fiber gum. ⺠Corn fiber gum isolated from wet milling endosperm fiber contains higher amount of protein than corn fiber gum isolated from wet milling pericarp fiber.
