Abstract
												⺠Ozone treatment caused partial depolymerization of high molecular weight amylopectins. ⺠Ozone treatment resulted in higher amount of carboxylic groups in amylopectin fractions. ⺠Ozone treatment increased swelling of starch granules during heating in water and subsequent increase in paste breakdown. ⺠Starch granule crystallinity was not affected by ozone treatment.
