Abstract
⺠Pectin is abundant throughout the hyaline and chlorophyllous cell wall. ⺠Acid-dissociation of pectin carboxyls explain the preservation properties. ⺠Salmon fillet exudate incubated inside/surrounding hyaline cells smelled fresh. ⺠Chlorite-treated Sphagnum has a potential commercial application in preservation.
