Abstract
⺠Amphiphilic dodecanol alginate (DA) presented a fine emulsibility. ⺠The DA could be adsorbed on the oil/water interface of droplets in emulsion. ⺠The emulsions containing 0.8-1.2 wt% DA presented better stability.
