Abstract
⺠Konjac is a large molecular weight glucomannan with many uses in the food and pharmaceutical industries. ⺠However, high molecular weight and water absorption can sometimes be limiting factors. ⺠Modification by extrusion was shown to be able to reduce molecular weight, water absorption index and viscosity. ⺠Particular properties could be had by differing extrusion conditions.
