Abstract
► Konjac is a large molecular weight glucomannan with many uses in the food and pharmaceutical industries. ► However, high molecular weight and water absorption can sometimes be limiting factors. ► Modification by extrusion was shown to be able to reduce molecular weight, water absorption index and viscosity. ► Particular properties could be had by differing extrusion conditions.
