Abstract
⺠Akebia trifoliata var. australis peel was rich in pectin (13.26%) and sugars (18.21%). ⺠HEP and CEP were of low neutral sugar contents, high DE values and GlaA contents. ⺠Typical of amorphous character and similar FT-IR patterns were shown in HEP and CEP. ⺠HEP had a higher molecular weight, emulsion activity and gelling properties than CEP. ⺠A. trifoliata var. australis pectin had the potential for food industry application.
